Dairy free treats are becoming easier and easier to make.  I’m learning how to make little swaps in baked goods to make them deliciously dairy free.  These treats are no different!  I swapped out the butter for coconut oil, added a little vanilla, and voila!  Rice Krispie treats for the win!

I don’t think I’ve had Rice Krispie treats since high school! It was so fun to whip up this fun and easy dessert.  I also got to teach my little kitchen helper how to make them, even though he wouldn’t eat any.  He’s picky, what can I say.  But he looked cute anyway!

The marshmallows I used this time weren’t vegan, but this would be an easy swap to make the recipe totally vegan.   First, melt 1/4 cup coconut oil in a pan and add 10oz. of marshmallows.  Depending on the brand you use, some bags have 10.5 ounces of marshmallows – just dump the whole bag in there!  Now, add 1 teaspoon of vanilla to give it a little extra flavor.  As the marshmallows begin to cook, they’ll puff up in the pan.  Keep mixing until you have a paste-like consistency.  Then add your 5 cups of rice cereal, any brand. 

I believe that Kellogg’s Rice Krispie treat brand make the best treats for this, but if you are gluten free, there are other brands that will work for you.  I used Trader Joe’s brand for this recipe and it was still very good!  I’d also like to try this recipe with a bunch of different types of cereal to make snack bars.  Stay tuned for more yummy goodness!rice krispie
