When I bought the Instant Pot during Amazon Prime Days, I thought…Can this REALLY replace my crockpot?  Because y’all I swear I couldn’t get by without my trusty crockpot(s).  Working in the evenings means my hubby and babies need a hot meal cooked and ready when they get home, even if I’m at work.  But then there are days where I’m home and forgot to make something in time for the Crockpot.  Hello Instant Pot!  So does it really live up to all the hype?

Yes, the Instant Pot should be called Magic Pot!

I whipped up this super easy Mexican Chicken and Rice in less than 30 minutes and the chicken breast hadn’t defrosted all the way.  (Oops.)  And it was still delicious and different from what we normally eat, so everyone was happy.

2 Boneless Skinless Chicken Breasts

1.5 Cups White Rice

1 Can Whole Stewed Tomatoes

1 tsp minced garlic

1 tsp cumin

1 Cup Salsa

1 tsp Chili Powder

1/2 tsp Smoked Paprika

1 tsp black pepper

2 tbsp Olive Oil

Add olive oil to the bottom of the instant pot and place chicken breasts on top of the oil. Add remaining ingredients (except rice) into the Instant Pot and close the lid. Turn on the poultry setting for 22 minutes. When done, remove chicken from pot and add uncooked rice to the “juices” left.   Turn on the rice setting and let it cook through. While rice is cooking, shred the chicken. Serve rice and chicken while hot.
